About Khalid Shifa
Khalid Shifa’s connection to his coffee farm in Jimma is a story of generational love and dedication. He inherited the land from his father, who inherited it from his own father. The roots of this journey began when Khalid’s grandfather ventured into the Choché forest to source wild coffee plants. Having grown up wandering among the trees, Khalid holds an intimate knowledge of the land and treats his plants like his own children. He constantly strives to improve his coffee quality and dreams of passing this rich heritage down to his three children.
What is Forest Coffee?
This coffee represents a unique expression of terroir, growing naturally within the protective canopy of native Ethiopian forests. These ecosystems have supported cultivation for over 400 years. Unlike typical plantations where shade trees are artificially introduced, this is a genuine, ancestral agroforestry system where nature provides ideal growing conditions in rich, fertile soil.
By attaching financial value to forest coffee, production directly helps maintain endangered ecosystems that would otherwise vanish. The final result is a coffee with a highly distinctive sensory profile, serving as a tangible taste of its specific forest origin.
