La Unión
La Unión is a collected lot from 5 villages in the Nariño Department in Colombia, known to have a varied geography and climate according to altitude. The Pacific plains are hot while the mountains, where most of the population lives, are cold. This makes for a hospitable environment for coffee growing. A lot of the maintenance, production and processes used across the farms are low tech and do very little to harm the land on which the coffee is cultivated.
Three times a year a scythe is used to manually maintain the grounds, decomposed coffee pulp is also used as compost so as to ensure all of the resources are used cyclically. They also pulp and ferment the picked coffee once, ensuring that the sensorial notes within the coffee are not compromised.
